El día de hoy les compartiré paso a paso una receta de una comida típica de los llanos venezolanos como lo es las caraotas charlotas.

### English Happy day to all my dear friends and followers of this wonderful community of culinary art lovers. Warm and affectionate greetings to all of you. Today I will share with you step by step a recipe of a typical food of the Venezuelan plains such as caraotas charlotas.

Antes de dar los detalles del modo de preparación les voy a comentar que este tipo de legumbres son un alimento nutritivo y saludable. Rico en fibra, vitaminas y minerales, además resulta muy económico ya que en nuestra localidad se cultivan en grandes cantidades. Consumirlos con frecuencia ayuda a reducir los niveles de azúcar y colesterol en nuestro organismo. Y para no aburrirlos existe gran diversidad a la hora de prepararlos. La comida criolla es una mezcla de distintas culturas gastronómicas que nuestros primeros pobladores se encargaron de unir y que nosotros a diario también vamos moldeando a nuestros gustos y preferencias

Before giving the details of how to prepare it, I will tell you that this type of legumes are a nutritious and healthy food. Rich in fiber, vitamins and minerals, it is also very economical because they are grown in large quantities in our town. Consuming them frequently helps to reduce the levels of sugar and cholesterol in our organism. And so as not to bore you, there is great diversity when it comes to preparing them. The Creole food is a mixture of different gastronomic cultures that our first settlers were in charge of joining and that we are also daily molding to our tastes and preferences.

Los ingredientes a utilizar para este delicioso menú son los siguientes : -1 kg de caraotas charlotas -Aliños verdes surtidos (ajo porro y cebollin) -1 cebolla -1 cabeza de ajo -2 papas -1 zanahoria -sal al gusto Para acompañar : -250 gramos de queso llanero duro -2 platanos -Harina de maíz precocida -3 huevos

The ingredients to be used for this delicious menu are the following : -1 kg of caraotas charlotas -Assorted green garlic and chives (garlic and onion) -1 onion -1 head of garlic -2 potatoes -1 carrot -Salt to taste To accompany -250 grams of hard llanero cheese -2platanos -Precooked corn flour -3 eggs

Para la preparación comenzamos por escoger las caraotas eliminando las que estén en mal estado o incluso alguna concha o piedrita que les halla quedado en el momento del desgrane, las remojamos en un tazón por un buen rato desechando los granos que floten. Posteriormente las montamos en una olla a fuego alto una vez que hierba el agua tomará un color turbio y aveces hasta espumoso por lo tanto debemos colarlas y colocarles agua nueva, continuamos con el proceso de cocción y cuando ya estén un poco blandas colamos el agua nuevamente; este proceso debemos realizarlo al menos 5 veces según mi madre que fue quien me enseño esta receta me dice que es para quitarle el sabor ácido y un poco amargo característico de este tipo de legumbres

For the preparation we begin by choosing the beans eliminating those that are in bad condition or even any shell or pebble that has been left at the time of shelling, we soak them in a bowl for a while discarding the grains that float. Then we put them in a pot over high heat, once the water is boiling the water will take a cloudy color and sometimes even foamy so we must strain them and put new water, we continue with the cooking process and when they are a little soft we strain the water again; this process must be done at least 5 times according to my mother who taught me this recipe tells me that it is to remove the acid taste and a little bitter characteristic of this type of legumes.

Mientras que las mismas siguen alcanzado su punto de cocción procedemos a picar y sofreír los Aliños así como también pelar y picar la papa y la zanahoria. Incorporamos estos ingredientes a la olla removemos y dejamos hervir otro rato más hasta que notemos que este bien asopadas

Una vez listas las caraotas vamos preparando todo lo demás comenzando por las arepas para lo cuál en un tazón añadimos la cantidad de harina que vayamos a necesitar con sal al gusto, amasamos y tendemos las arepas en un budare pre-calentado, continuamos de manera simultánea friendo las tajadas y los huevos y rayando el queso. Sin olvidarnos de voltear periódicamente las arepas para que no se nos quemen

Once the beans are ready we prepare everything else starting with the arepas for which in a bowl we add the amount of flour that we are going to need with salt to taste, knead and lay the arepas in a preheated budare, we continue simultaneously frying the slices and eggs and grating the cheese. Do not forget to turn the arepas periodically so that they do not burn.

Una vez preparados todos los alimentos ya estará listo para servir y degustar de este delicioso plato típico venezolano. Antes de despedirme les comento que aunque la elaboración de este menú lleva algo de tiempo y trabajo yo con mucho amor y dedicación lo preparo muy seguido ya que en casa a todos nos gusta mucho y además las caraotas rinden bastante y posteriormente las consumimos recalentadas en el tradicional desayuno criollo venezolano del cuál les estaré compartiendo detalles en un próximo post
